THALI

Mutton Thali

Well marinated mutton cooked in various masalas. Spicy curry, pickled meat, pan tossed chunks along with smokey spice blend, mutton mince with a sharpness of green chili, flavorful meat broth which is popularly known as TAMBADA RASSA, chilled Solkadhi a coconut drink with a divine sourness of plums, and fried chilli Thecha. Hot Maharashtrian bread, bhakri and rice. Chikki ice cream (nougat) or Khavapoli (condensed milk cake stuffed pancake)

Kala Sukka Chicken / Kala Sukka Mutton

The most popular starter from Khandesh. This part of Maharashtra is know for very hot palate. Spices are roasted to perfection along with chilies over charcoal and then ground.

Mutton Chops Tawa Fry

mutton chops marinated overnight. Cooked to perfection in a pan along with freshly ground masala. This cannot taste better without searing it over generous helping of ghee (clarified butter).

Mutton Chop In Green Masala

A special masala of green chilies, coriander, coconut, slight fenugreek, ginger n garlic. This is a famous starter from Solapur. Not too spicy ,yet absolutely yummy.

Laal Sukka Chicken

A masala made of caramelized onion, pan roasted coconut, red dry chilies, garlic, ginger, coriander seeds, dash of asafoetida.
A tadka of mustard seeds and cloves makes this dish even tastier.

Nagpuri Chicken Masala / Nagpuri Mutton Masala

Chef's secret blend of spices roasted over charcoal to give a distinctive smokey flavor. Dark reddish brown onion based gravy and meat chunks cooked to perfection in it.

Chicken Achaar / Mutton Achaar

Cooked meat tossed over high flame along with pickling ingredients to compliment those spices with a tangy twist. One can have it as a starter or even a main-course with hot rice.

Dahi Chicken / Dahi Mutton

Vidarbha is known for their extensive use of spices in their daily food. To minimise the harshness, mild eaters have modified the cuisine by adding yogurt & ghee (clarified butter) to preparations.

Khadi Chicken / Khadi Mutton

Residents of backwaters of Konkan have innovated this recipe. Blend of sweet spices, bit of dry chilli, dash of kokum, creamy coconut milk and freshly made paste of herbs.

Varhadi Kharda Chicken / Varhadi Kharda Mutton

This region is known for the simplicity in their cooking. Meat is marinated with rustic chilli paste and then cooked with onion gravy to perfection.

Kheema Chicken / Kheema Mutton

Coarsely minced meat cooked in a red chili masala paste over hot oil and cumin seeds. The moment meat cooks and absorbs those lovely flavors, aromas are spred in area.

Shahalyatali Kombdi

A mild coastal chicken recipe. blend of delicate spices, chicken chunks, tender coconut water and cream cooked on a slow flame. This Konkani dish is awesome.

Kombadiche Lapshap

Kolhapur, a city known for wrestling rings. Those Pahilwans are just never satisfied with available variety and thus Chefs there keep innovating new recipes. This one is a perfect example of it. Mildly spiced chicken cooked in tambada rassa (red chilli broth) on a slow flame.

Sangameshwar Kombdit

The richness of northen spices influence was introduced by Mughals to sangemeshwar,a small town in Konkan. Fresh herbs, coconut, cashews and mild blend of spices made into paste. Chicken cooked to perfection in a medium gravy and then added slight sourness of Kokum (Indian plums).

Crispy deep fried gram sticks poured over spicy vegetarian gravy. An excellent recipe from Khandesh.

Akkha Masoor

Steamed whole red lentils simmered with Kolhapuri garam masala and onion gravy.

Mataki Ussal

Dew bean sprouts cooked with fresh herbs, red chilli powder, pinch of asafoetida and masala. This this spicy curry tastes fabulous after giving a drizzle of lemon juice just before eating.

Bharle Wange

Most traditionally cooked vegetarian recipe in Maharashtra. Aubergine stuffed with goda masala, grated coconut, roasted groundnuts, sesame seeds, jaggery and freshly chopped coriander.

Pithala

Slightly roasted gram flour mixed with buttermilk and then thickned over a stove with fresh herbs and chillies.

Dahi Bhendi

Pan fried stuffed lady fingers topped with spiced yogurt. This is one of our Chef 's favourite recipe.

Chicken Kala Rassa / Mutton Kala Rassa

Over 25 different spices are roasted to get optimum flavours along with 3 types of dry chillies, sun-dried garlic and kibbled onion.Then made into paste with roasted gram lentils and pearl millet flour. Well marinated meat then cooked preferably on a charcoal stove with a broth and this masala paste.
